Feta Ravasaki

Ravasaki with feta cheese is a traditional Greek appetizer. It is a delicious fried slice of feta cheese wrapped in Greek filo dough and sprinkled with honey and sesame seeds. On our island, we often use our Petroti cheese instead.

Melomakarona

Melomakarona are soft, aromatic cookies that are particularly popular during the Christmas season in Greece. They are soaked in honey syrup and sprinkled with chopped walnuts. On our island, we refine the recipe with our Androas honey, giving it a unique touch of the Cycladic tradition.

Ingredients

  • 3 sheets of phyllo pastry

  • 3 tablespoons honey

  • 1 teaspoon black sesame seeds

  • 400g hard feta cheese

  • Corn oil for frying

Instructions

1. Fold a sheet of filo pastry in half. Place a piece of feta cheese (about 3 cm thick) in the middle. Fold the sides of the pastry inwards and roll it up like an envelope, securing the cheese inside. Repeat with the remaining sheets of pastry. 2. Heat the oil in a frying pan. Once hot, fry the feta pockets until they turn a lovely golden color. 3. Remove the pockets from the pan and place on a serving plate. 4. Drizzle the honey evenly over the pockets using a spoon, making sure it spreads evenly and doesn’t clump in one spot. 5. Sprinkle with black sesame seeds and enjoy warm.

Zutaten

  • 400 g orange juice

  • 530 g sunflower oil

  • 50 g melted butter

  • 30 g powdered sugar

  • 1/2 tsp baking soda

  • 1/4 tsp cinnamon

  • 1/6 tsp ground cloves

  • Zest of 1 orange

  • 1,200 g flour

  • 500 g water

  • 700 g sugar

  • 1 orange, halved

  • 2 cinnamon sticks

  • 100 g honey

  • Chopped walnuts, for garnishing

  • Honey, for glazing

Instructions

For the syrup: 1. In a pot, add the water, sugar, halved orange, and cinnamon sticks. 2. Place on heat and bring to a boil for 1 minute. 3. Remove from heat, stir in the honey, and let the syrup cool. For the melomakarona: 1. In a large bowl, combine the orange juice, sunflower oil, melted butter, powdered sugar, baking soda, cinnamon, ground cloves, and orange zest 2. Mix gently by hand. Gradually add the flour, mixing softly from the center outward to avoid overworking the dough. 3. Shape the dough into small oval shapes. Lightly texture one side by pressing it against a grater. Arrange the melomakarona on a baking tray lined with parchment paper and bake in a preheated oven at 180°C (350°F) for about 30 minutes until golden brown. 4. While the melomakarona are still warm, submerge them in the cooled syrup. Turn them gently with a spoon for about 1 minute. Remove and place on a rack to drain. 5. On a serving plate, drizzle honey and sprinkle chopped walnuts. Arrange the melomakarona in layers, repeating the process until all are plated. Enjoy!

Pancakes with Feta and Honey

Ingredients

  • 150 g water

  • 4 g dry yeast

  • 250 g hard flour, plus extra for dusting

  • 15 g olive oil, plus extra for greasing the bowl

  • ¼ tsp salt

  • 1 liter sunflower oil, for frying

  • 200 g myzithra cheese

  • 100 g honey

  • Mint leaves

Instructions

1. Place the water and yeast in the bowl of a stand mixer. 2. Mix by hand with a whisk until the yeast has dissolved. 3. Add the flour, olive oil and salt. Knead with the dough hook on medium speed for 7-10 minutes until the dough is smooth and elastic. 4. Grease a bowl with olive oil and add the dough. 5. Cover with plastic wrap and let the dough rise at room temperature for about 1 hour until it has doubled in size. (The rising time depends on the room temperature.) 6. Heat a deep pan over medium heat, add the sunflower oil and bring to temperature. 7. Line a baking tray with kitchen paper and set aside. 8. Dust the work surface with flour and place the dough on it. Shape the dough into about 15 small balls, about the size of a walnut. Flatten each ball slightly and fry in three batches. 9. Fry the dough pieces for 1-2 minutes on each side until golden brown. Use a slotted spoon to transfer to the prepared baking sheet. 10. After frying, remove the pan from the heat. Crumble the feta over the fried dough pieces with your hands. Drizzle with honey and garnish with mint leaves. 11. Serve and enjoy!
